Salty Bird Cocktail

I love this cocktail… I first made it to ‘fill up’ the menu for a live cocktail session on Facebook for ‘Rum Week’ last year and it very quickly became a favourite!

I love it with Cockspur or Mount Gay dark rums, but it works so well with almost any rum you have.

1.75oz (52.5ml) rum
1oz (30ml) Campari or Aperol
1.75oz (52.5ml) pineapple juice
0.5oz (15ml) lime juice
0.25oz (7.5ml) sugar syrup
Pinch of salt
Fresh or dried pineapple or lime to garnish

Shake everything except the garnish with ice and strain into a highball filled with ice – garnish with pineapple and lime slices.
